The inspiration for The Exile ("pot-cheen") is drawn from some great nights of spirit, music, and dance the Tara team have shared in Australia & Ireland, while also calling back to the Shoalhaven Region's illicit spirit-making past.
The Exile is a smooth, traditional white spirit handcrafted from local NSW barley & oats. Tara use a specific mashbill exclusively for The Exile, which is milled & brewed onsite, then slowly triple-distilled in copper pot stills. A fine hearts cut is taken, then gently mixed with pure harvested rainwater down to 50% abv, it's a smooth and complex dram.
Perfect on its own, over ice, or as an exciting variation in your favourite whisky cocktails. This is a whisky drinker's drink.
Poitín was first made by Irish monks in the 6th century and known as "uisce beatha" (pronounced "ishka baha") meaning "the water of life". The muse of many a good night out, it has long been celebrated in story and song - the stuff of myth and legend!
